As we’re enjoying our social distancing, we’re getting a lot of work done around the house, exercising, taking walks, doing puzzles, playing games and trying lots of new recipes.
A few days ago, Son #4 cooked his specialty Spanish rice and roasted vegetable salad. I’m not a big fan of Mexican food but it was yummy!!
Last night was Daughter #2s turn to pick a recipe and cook it for us with the help of Daughter #1. She found the recipe on GimmDelicious.com

- 4 small chicken breast butterflied
- 1 tsp Salt
- 1 tsp pepper
- 2 Tbsp olive oil
- 3-4 cloves garlic minced
- 1 cup heavy cream
- 1 Tbsp Italian seasoning
- 1/2 cup Parmesan cheese grated
- 1 cup spinach chopped

- Season chicken with salt and pepper. Heat olive oil in a large skillet or pan. Add chicken to the pan and cook for 5-6 minutes per side or until the outside is golden and the chicken is cooked through.
- Remove chicken from the pan, reduce heat to low-medium, and add garlic. Stir for 30 seconds. Add the heavy cream, Italian seasoning, and parmesan cheese. Stir to combine. Stir in 1 cup chopped spinach. Simmer for another 2-3 minutes.
- Return chicken to the pan and simmer for another minute then turn off heat. Spoon sauce over chicken. Serve with pasta and/or vegetables.
We served the delicious chicken on top of spaghetti, with sides of broccoli and onion and spinach and bacon with garlic breadsticks.
Another great recipe and my kids are learning to cook and work together. I love it!!!!!
