HAPPY NEW YEAR!!!!

I know I’m a few days late but the year 2020 is hopping in our house!!

We were blessed to have all the kids plus one fianceé, one girlfriend, and one friend here to celebrate the first of the year with us. Sadly, I didn’t get to take a picture of everyone but I did take some pictures of our tablescape and some yummy food.

I decorated the dining room table with my favorite color ~ Blue.

We tried something new for our New Years meal this year. For many years we had the regular staple of turkey, stuffing, cranberry sauce, and pumpkin pie until we found out that some of the family don’t even like turkey!!! WHAT??!! It is, by far, my favorite meal of the year. So for the past couple of years, we’ve tried to be a little bit more creative with our meal planning. First we tried to make the turkey more exciting so  we tried Bacon Wrapped Turkey. Then we got even more creative with meals like prime rib this past Christmas. It was definitely a hit with some of the kids and I didn’t even blog about it!! Blog fail!! Last year for New Years Day we had Lobster Cantonese, Beer Can Chicken three Christmases ago, and Honey Glazed Ham for Easter.

So this year we tried something we’ve never done before…..

CORNISH GAME HENS

First, let me point out how freakin’ cute these little babies are!! We bought one per person so we had eleven cute little cornish hens.

After thawing them in cold water for about an hour, the LOML cleaned the inside and out with water then dried them off with paper towels. We then placed them on roasting racks inside roasting pans. We stuffed a sprig of rosemary, a lemon wedge and a teaspoon of minced garlic into each cavity. We brushed melted garlic butter all over the outside of each hen. Then we sprinkled each with salt and pepper.

We popped them into the oven and baked at 450° for 25 minutes, then we reduced the temperature to 350° for another 25 minutes. Before the last 25 minutes of baking we combined 1 cup of white wine, 1 cup of chicken broth, and 6 tablespoons of olive oil in a bowl and poured the mixture over all eleven hens.

We placed the cooked hens on platters and tented with aluminum foil to keep warm. We transferred pan juices to a medium saucepan and boiled until liquids were reduced to a sauce consistency. The LOML added a 1/2 cup heavy whipping cream to make it a little creamier.

Instructions
  1. Preheat oven to 450 degrees F.
  2. Rub hens with 1 Tbs of the olive oil. Lightly season hens with salt and pepper. Place 1 lemon wedge and 1 sprig of rosemary in cavity of each hen.
  3. Arrange hens in a large, heavy roasting pan, and arrange garlic cloves around hens.
  4. Roast in preheated oven for 25 minutes.
  5. Reduce oven temperature to 350 degrees F.
  6. In a mixing bowl, whisk together wine, chicken broth, and remaining 2 Tbsp of oil; pour over hens.
  7. Continue roasting about 25 minutes longer, or until hens are golden brown and juices run clear. Baste with pan juices every 10 minutes.
  8. Transfer hens to a platter, pouring any cavity juice into the roasting pan. Tent hens with aluminum foil to keep warm.
  9. Transfer pan juices and garlic cloves to a medium saucepan and boil until liquids reduce to a sauce consistency, about 6 minutes.
  10. Cut hens in half lengthwise and arrange on plates. Spoon sauce and garlic around hens Garnish with rosemary sprigs and serve.
