Son #1 came over and he and Son #2 helped us move a whole lot of heavy furniture around in our house to clear out our master bedroom so we can finally lay down our engineered hardwoods.
To reward them for all their hard work, we made them a yummy dinner.
HONEY CHICKEN THIGHS
Ingredients
3 lbs chicken thighs with skin
1 Tbsp salt
3 Tbsp sugar
1 1/2 Tbsp soy sauce
3/4 Tbsp cooking wine
1 Tbsp Hoison sauce
1/4 Tbsp white pepper
1/2 Tbsp oyster sauce
Directions
Mix all ingredients together. Pour over chicken thighs and marinate for 3-4 hours with half the mixture.
Apply remainder of mixture before baking.
Bake skin side down at 350 degrees for 45 minutes, flipping chicken half way through.
Then turn up to 375 degrees for 15 minutes to brown the skin.
Drizzle with honey before serving.
I got this recipe from my MIL and it’s one of my family favorites!
GRILLED ASPARAGUS WRAPPED IN MOZZARELLA CHEESE AND PROSCIUTTO
Ingredients
20x asparagus heads
10x prosciutto slices
ball fresh mozzarella (sliced into 10g pieces)
Fry Light (I just sprinkled with olive oil)
ground pepper
Directions
Top two pieces of asparagus with 10g of mozzarella
Wrap the asparagus and mozzarella in a piece of prosciutto, making sure to finish at the bottom so as to make sure it doesn’t unwrap. Sprinkle with a bit of ground pepper.
Repeat ten times.
Spray a griddle, griddle pan or frying pan with fry light and heat until the fry light is bubbling. Place your asparagus seam side down.
If you have something to weigh the asparagus down with, you can use this but it’s not necessary.
Grill for 3-4 minutes on each side, or until the asparagus is cooked to your liking.
Remove from the pan and serve immediately.

The boys helped us move almost everything (all the really heavy stuff) out of our bedroom.
And I think they enjoyed their pay. It was yummy!!
This weekend we’re laying our wood floors. I’m so excited to show y’all!!
Love y’all,
Linda
