I was looking for a finger food with lots of flavor, easy to make, easy to clean up.

THE BEST LOADED POTATO SLICES
Delicious potatoes dressed up with melted cheddar cheese, bacon, and green onions.

Instructions
  1. Preheat oven to 400° .
  2. Gently cook 3 slices of bacon - keep in mind the bacon will cook more in the oven, so don't make the slices too crispy.
  3. Prepare the baking dish with foil and non-stick spray.
  4. Slice the potatoes into "chips" that are about 1/2" - 3/4" thick and place them on the baking sheet.
  5. Melt the butter and generously brush each potato slice with butter.
  6. Season the slices with salt and pepper.
  7. Bake the potato slices for 30 minutes.
  8. Remove from the oven and sprinkle on the shredded cheese, bacon chunks and green onions.
  9. Return the baking dish to the oven and bake for an additional 5 minutes.
