I was looking for a finger food with lots of flavor, easy to make, easy to clean up.

Ingredients
- 3 Russet Potatoes
- 1/3 cup butter melted
- salt and pepper to taste
- 2 cups cheddar cheese shredded
- 3 slices bacon cooked, cut into chunks
- 3 stalks green onions chopped

Instructions
- Preheat oven to 400° .
- Gently cook 3 slices of bacon - keep in mind the bacon will cook more in the oven, so don't make the slices too crispy.
- Prepare the baking dish with foil and non-stick spray.
- Slice the potatoes into "chips" that are about 1/2" - 3/4" thick and place them on the baking sheet.
- Melt the butter and generously brush each potato slice with butter.
- Season the slices with salt and pepper.
- Bake the potato slices for 30 minutes.
- Remove from the oven and sprinkle on the shredded cheese, bacon chunks and green onions.
- Return the baking dish to the oven and bake for an additional 5 minutes.
