Our family keeps getting smaller and smaller. Son #4 graduated from college in June and now lives in an apartment about 15 minutes away. Now there is just four of us at home (which if you think about is a normal household size!!) and the dinner table seems humongous!!
We’re also finding it difficult to scale down on the amount of food we cook. Girls eat so much less than the boys.
We’ve been trying to find fun recipes that the four of us would enjoy.
Daughter #1 asked for meatloaf.
I found a great meatloaf recipe at Natasha’s kitchen.

- 2 lbs ground beef extra lean
- 1 medium onion finely chopped
- 2 large eggs
- 3 garlic cloves minced
- 3 Tbsp ketchup
- 3 Tbsp fresh parsley finely chopped
- ¾ cup Panko breadcrumbs
- 1/3 cup milk
- 1½ tsp Salt to taste
- 1½ tsp Italian seasoning
- ¼ tsp ground black pepper
- ½ tsp ground paprika
- ¾ cup ketchup
- 1½ tsp white vinegar
- 2½ Tbsp Brown Sugar
- 1 tsp garlic powder
- ½ tsp onion powder
- ¼ tsp ground black pepper
- ¼ tsp Salt

- Line a 9x5 loaf pan with parchment paper and preheat oven to 375°F.
- In a large bowl, add all of the ingredients for the meatloaf. Mix well to combine.
- Add meat to the loaf pan, gently press meat down and shape evenly and bake meatloaf for 40 minutes.
- In a small bowl, mix all of the ingredients together for the glaze. Spread the glaze over the meatloaf then return to oven and bake an additional 15-20 minutes. Rest meatloaf 10 minutes before slicing.
Has anyone tried Chick-fil-A’s mac and cheese? I can honestly say it’s the best mac and cheese I have ever had!! The LOML found a copycat recipe at 365 Days of Crock Pot.

- 2 cups water or broth
- 8 oz elbow macaroni
- 1 tsp kosher salt
- ¼ tsp pepper
- 1 cup heavy cream
- 6-8 oz sharp cheddar cheese shredded
- 2 Tbsp Parmesan cheese
- 2 oz Colby Jack cheese shredded

- Add water, macaroni and salt to Instant Pot.
- Cover and lock lid into place. Make sure valve is set to sealing. Set the manual/pressure cook button to 5 minutes. When time is up let pot sit for 5 minutes and then move valve to venting. Remove the lid.
- Stir in the cream. Stir in the Sharp Cheddar and Parmesan cheeses until melted.
- Add Colby jack on top of the pasta. Place air fryer lid on top and cook for 3 minutes at 400°F, or until cheese begins to brown. If you don't have an air fryer lid you can do this stop under your oven's broiler.
- Serve and enjoy!
We added corn on the cob cooked with milk and sugar and this meal was a hit!
