PINK SAUCE PASTA ~ and the baby of the family is growing up!

Happy New Year Everyone!

 

For New Year’s Eve, the LOML (Love of my life) and I went out to our favorite Thai restaurant. Nearby, a family was also celebrating New Year’s Eve but in a very different fashion. There was a mom and a dad and three young boys ages about 8, 5, and 2. There was the usual dropping of sippy cups, food strewn on the floor, mom distracting the two year old who was sitting in the high chair backwards to stare at us…the old folks quietly enjoying their meal while secretly remembering that that was us a few years ago and laughing to ourselves.

This was the first time since having children (31 years ago!) that we could celebrate the holiday just us. We love hanging out together and we are so blessed that we still really like each other. But it was still awfully quiet.

We ran into the young family outside the restaurant and the LOML thanked them for reminding us of wonderful memories. We told them their family was beautiful and to enjoy every second. It goes by so fast.

A yummy pasta dish with a little special twist.

Instructions
  1. Cook the pasta to al dente according to package instructions, then drain, reserving some of the pasta water.
  2. Heat a large skillet over medium heat and add the butter and olive oil. Once the butter has melted, add the onion and cook for 4-5 minutes until softened. Add the garlic and cook for another minute.
  3. Add the tomato passata, dried basil, crumbled chicken bouillon cube, sugar, red chili flakes and salt and pepper to taste. Simmer for a few minutes, then add the cream, milk and the shredded mozzarella.
  4. Add the cooked pasta, toss to combine and warm through for a few minutes. If sauce is too thick, add a splash of pasta water. Enjoy!
  5. NOTE: You can add shrimp or chicken, or serve this on the side of steak. But plain like this is just delicious!

We didn’t add any meat but it would have been great with some shrimp or chicken but it was delicious by itself.
