Carrots are not a favorite veggie at my house. How about yours?
Today as I was figuring out what to do for dinner, we didn’t have a veggie to cook except for carrots. And I was not gonna run out and buy a veggie.
So carrots it was!!
How can I make carrots that my family would enjoy eating without the moaning and complaining??
I found a recipe on The Recipe Critic that sounds absolutely yummy!!

- 2 pounds large carrots cut into 2 inch pieces we used carrot chips
- ½ cup butter
- 2 tbsp honey
- 2 cloves garlic, chopped
- salt and pepper to taste
- parsley, chopped for garnish
Ingredients

- Preheat oven to 425°.
- In a medium saucepan, add the butter and cook over medium high heat.
- Continue to whisk for a few minutes until the butter starts to become frothy and brown. Add the honey and garlic and remove from heat.
- In a large bowl add the carrots and drizzle the sauce on top. Toss until coated and spread evenly on a large baking sheet. Season with salt and pepper.
- Bake for 15-20 minutes or until carrots are tender.
- Transfer to a serving dish and garnish with parsley. Serve immediately.
We also had pan fried Bourbon Glazed Salmon,
Near East rice pilaf,
and Sister Schubert’s rolls.
The dinner was yummy. Daughter #2 asked if I could use a little less butter and more honey next time. I took note!
