ROASTED BROWN BUTTER HONEY GARLIC CARROTS

Carrots are not a favorite veggie at my house. How about yours?

Today as I was figuring out what to do for dinner, we didn’t have a veggie to cook except for carrots. And I was not gonna run out and buy a veggie.

So carrots it was!!

How can I make carrots that my family would enjoy eating without the moaning and complaining??

I found a recipe on The Recipe Critic that sounds absolutely yummy!!

Instructions
  1. Preheat oven to 425°.
  2. In a medium saucepan, add the butter and cook over medium high heat.
  3. Continue to whisk for a few minutes until the butter starts to become frothy and brown. Add the honey and garlic and remove from heat.
  4. In a large bowl add the carrots and drizzle the sauce on top. Toss until coated and spread evenly on a large baking sheet. Season with salt and pepper.
  5. Bake for 15-20 minutes or until carrots are tender.
  6. Transfer to a serving dish and garnish with parsley. Serve immediately.

The dinner was yummy. Daughter #2 asked if I could use a little less butter and more honey next time. I took note!

What are your plans for the weekend? We’re going to the zoo with part of the family on Saturday and painting our deck Sunday. Can’t wait to show you the after pictures!! Whatever you do, have fun and be safe!
