Because the LOML and I and Son #1 and his sweet girlfriend Miss B are on a keto diet, I’m always looking for new and yummy recipe ideas. I’m constantly looking on Pinterest, facebook, allrecipes.com and many others.
One day when I was catching up with all my friends on facebook, I found a guy, Los Silva, that teaches “The Keto Detox”. I went to his website and watched some of his videos. He really gets you pumped up to do this diet and stick with it. I bought one of his cookbooks that is filled with great keto recipes.
Since Son #1 and Miss B were coming over for dinner, I browsed through the cookbook and found this recipe to try.
STUFFED BEEF ROLLS
Ingredients
2 lbs. flank steak, thinly sliced
6 oz prosciutto
6 oz cream cheese
3 oz mozzarella cheese, shredded
1 Tbsp Parmesan cheese, grated
3 oz Swiss cheese, shredded
2 Tbsp butter
12 oz mushrooms, chopped
1/4 large onion, chopped
2 cups baby spinach
1 tsp garlic, minced
salt and pepper
Directions
- Preheat oven to 375 degrees.
- Place half of the butter, mushrooms and onion in a pan.
- Saute until tender.
- Remove from heat, add the cream cheese and mix thoroughly.
- Mix in the other three cheeses, allow to melt (turn the heat on low if necessary), then mix in the spinach and garlic.
- Spread the prosciutto out on a cutting board, layer the flank steak over it.
- Layer the mushroom and cheese mixture over the flank steak.
- Roll the meats to make a flattened tube with the mixture on the inside.
- Place the other half of the butter in a cooking pan, melt it.
- Cook the meat on high until the cheese has melted and the meat is no longer red (about 20 minutes).
This meal was a real hit with the family! It was very tasty and the steak was cooked to perfection; slightly pink with the ends done more for the well-done crowd.
