Tonight was “Taco Night” at our house!
I’m not a big fan of Mexican and the rest of the family thinks I’m crazy. I don’t really spicy things so I tend to stay away from Mexican food but I love me some tacos!
Tonight, everyone wanted different kinds.
The LOML wanted a taco salad.
Daughter #1 wanted a soft shell taco.
Daughter #2 wanted a hard shell taco.
I wanted my favorite memory from Taco Viva, a wet burrito.
Don’t they all look yummy. Depending on your taste and mood, all of them are great tasting!
We always buy the taco kit which comes with 12 hard shells, seasoning mix and taco sauce.
We also buy large and small soft tortillas.
First step: Brown the hamburger and strain the oil.
Second step: I dissolve the seasoning packet into 2/3 cup of hot water in measuring cup then add to cooked meat. Heat.
Third step: Heat hard and soft shell tacos as directed on package. For the wet burritos, I don’t heat up the large tortillas. I place tortillas on a plate. Add cooked meat.
Add shredded lettuce.
Add shredded cheddar cheese.
Roll tortillas and place opening down.
Pour enchilada sauce on top.
Add more shredded cheese and microwave for one minute and dinner is ready to be served.
For the LOML taco salad, he used broken hard shell, shredded lettuce, diced tomatoes, shredded cheese and enchilada sauce.
For Daughter #1’s soft shell tacos, she used the small soft taco shells, meat, lettuce, cheese.
For Daughter #2’s hard shell, she just put meat and cheese. She’s my picky eater!!
There’s so many things you can add to each of these taco recipes ~ sour cream, quacomole, peppers, jalapeno peppers, charro beans, Mexican rice, onions, cilantro, and salsa. The list is endless.
What do you put on your tacos?
We’re working hard on the staircase this week. We’ve pulled the carpet off, removed all the tacking, nails, and staples. We’re in the process of removing the hand railing paint. WOW!!!! Our arms are hurting. It’s a lot of work but it will be worth it to get all the peeling paint off and repaint to look better.
